“HPP” in guacamole stands for High-Pressure Processing. HPP is a technology used in the food industry to extend the shelf life of guacamole and other food products while maintaining their freshness, flavor, and nutritional values.

High-Pressure Processing, or HPP, is an innovative technology utilized in the food industry with the aim of prolonging the shelf life of food products such as guacamole while preserving their freshness, taste, and nutritional content.

In the context of guacamole, here's how HPP works:

Preparation: Guacamole is prepared using fresh ingredients: hass avocados, tomatoes, onions, lime juice, garlic.
Packaging: The freshly made guacamole is placed in packaging that can withstand high pressure.
High-Pressure Processing: The packaged guacamole is subjected to high levels of pressure, usually between 60,000 and 87,000 pounds per square inch (psi). This pressure is applied for a specific duration, typically a few minutes to a few hours.
Pressure Release: After the required pressure treatment time, the pressure is slowly released from the chamber.

The application of HPP in guacamole serves several purposes:

Pathogen Reduction: HPP effectively kills harmful bacteria like Salmonella and E. coli, making the guacamole safer to consume.

Extended Shelf Life: By inactivating enzymes and microorganisms, HPP extends the shelf life of guacamole, reducing the need for artificial preservatives and additives.

Maintaining Quality: HPP is a cold pasteurization method, so it does not subject the guacamole to high temperatures that can negatively impact flavor, texture, or nutritional content. As a result, the guacamole retains a fresh and natural taste.
